EL JARDIN DEL COCINERO: Seasonal organic vegetables grown by Raúl Diez with care and dedication.

SAIFRESC: Local organic vegetables with organic certification.



FISH AND SEAFOOD


COFRADIA DE PESCADORES DE VALENCIA: Fish directly from the port.
We personally buy most of the fish and seafood we use at the auction.
This ensures that the fish is quickly descaled and gutted, necessary to obtain the highest quality.

Stand of ANGUILA JESÚS (Central Market): Fresh and wild eels (seasonal).

LES PERLES DE VALENCIA
(by Eduardo Tur and Cesar Gómez): Fresh and delicious oysters from the Port of Valencia.

CORDERO GUIRRA: Lambs raised in the Alcublas mountains according to our guidelines,
by José Miguel Garrido.

DEHESA SAN FRANCISCO: Organic IBERIAN ham, bacon and pork from Huelva,
raised in the Dehesa San Francisco by Ernestine Lüdeke.

COOPERATIVA DE VIVER: Extra virgin olive oil LÁGRIMA, one of the best oils we know.

ÖLMÜHLE HARTLIEB (AUSTRIA): Excellent seed oils such as pumpkin seed, poppy seed, tiger nut (by the way, they use the ones from Valencia), hazelnut, pine nut, almond or camelina oil.




CITRUS FRUITS


ASEAGRI (Faura): Citrus fruits such as Buddha's hand, yuzu, chocolate oranges, bergamot and others.
