“Le vin, moins on le touche, mieux ça vaut” Jules Chauvet
Jules Chauvet, the father of natural wine, said that the less you touch the wine, the better it comes out.
We have come to the same conclusion, and this is exactly what we are looking for now for the RiFF:
We believe that the wines that are touched the least are the ones that go best with our dishes.
They can have no sulphurous at all, or a homeopathic dose (we are not that radical), but they are all made from the same idea: The absolute respect for nature combined with minimal intervention in the vineyard and the winery, to preserve the purity and achieve the maximum expression of flavor and terroir.
Most of these wines come from small wineries, are of extremely limited production and sometimes very difficult to obtain.
Many of the bottles come to us directly from the winery, because we always seek to have a personal relationship with the winemaker, since it is sometimes impossible to understand a wine without knowing its creator. Behind every label there is a world, and to discover it you have to know the vineyard, the winemaker and, why not, even the horse that helps him in the vineyard.
The goal is for most of our wines to be minimally interventionist, but it is a process and it takes time. We are gradually reducing the wines that are not natural, biodynamic or organic, but we don't want to take them all off our list either - Some classics and wines that we have a lifelong sentimental bond with are going to stay in our cellar.
