This menu is also a workshop for us, a space to experiment. While the values of RiFF are paramount, we enjoy improvising when the restaurant is open. Sometimes, during a single service, we modify a dish two or three times, creating a kind of "jazz" in the kitchen.
This is possible thanks to a team of great professionalism, open to change, to continuous learning and capable of contributing all their knowledge.
I believe that the ability to constantly reinvent oneself is one of the reasons for our success.
I am aware that constantly trying and modifying dishes can lead to occasional small failures, but I prefer this to repeating the same recipes every day... I must admit, we get bored very quickly at RiFF.

The wine pairing (€40) surprises with its novelty and playfulness. Iván Rumyantsev, our sommelier, seeks the balance between wine and our cuisine, simple and with character, and it is no wonder that we surround ourselves with natural, fresh and wild wines, which even with Iván's mastery we barely manage to keep still in the bottle.
