COFRADIA DE PESCADORES DE VALENCIA (Valencia Fishermen's Guild): Fish directly from the port.
We personally buy most of the fish and seafood we use at the auction.
This ensures the fish is quickly descaled and gutted, necessary to obtain maximum quality.
