The first contains five endearing interviews with different personalities from various professions, discussing gastronomy with the dedication of each guest.
The second chapter features a series of photographs from Mollà's personal work, where the reader can observe a journey through landscapes and people related to the production of raw materials for gastronomy.
The third chapter contains dishes created by Bernd H. Knöller and his team, where the chef, in brief comments, explains the story and rationale behind each dish.
The fourth section gathers a collection of extraordinary photographs by Mollà showing the “interior” of the Riff restaurant.
Finally, there is a list of recipes for the dishes published in the book and their preparation process, as well as the English translation of all the texts in the book.

Bernd H. Knöller, a German chef from the Black Forest, based in Valencia for over twenty years and manager of Restaurante Riff (1 Michelin star), designed all the dishes in this book. Xavier Mollà, a photographer from Ontinyent (Vall d’Albaida), photographed the 64 recipes in the book and has also included some of his photographs from his work on the Mediterranean, and designed and laid out the book. This publication, with high-quality printing, has 372 pages that include 64 recipes and 604 photographs corresponding to the dishes, still lifes of the ingredients, as well as images of the making-of the recipes, and those trips the co-authors of the book have made together. Xavier Mollà has included some photographs from his personal work corresponding to Mediterranean towns. In February 2013, in Paris, the book Ànima Mediterránea was awarded the prize for the best Mediterranean cuisine book in the world at the Gourmand Cookbook Awards.

Our wineboxes (wine cases) are a selection of natural wines curated by our sommelier Ivan Rumyantsev with much love and feeling.
The idea of offering you a set of “natural wines” with different levels of complexity responds to the constant demand to gradually learn about these “new” flavors—cleaner, more transparent, deeper, and more sensitive, that so often surprise those unfamiliar with them.
Absolute respect for nature in the vineyard and minimal intervention in the winery, combined with the winemaker's talent, allow for the preservation of purity and achievement of the maximum expression of flavor and terroir.
More and more of us are observing the standardized processes of the wine industry with a critical eye, where large producers rely on complex industrial machinery, science, and other modern techniques, using countless chemical additives in a desperate attempt to produce hundreds of thousands of bottles of a drink that ultimately contains everything but grapes.
The absence of chemical additives or minimal intervention is not an end in itself for us – nor do we like flawed wines. Natural wine is just a tiny reflection of the conventional wine world: on both sides, there are excellent, good, average, and frankly bad wines. What we seek are well-made wines that give us pleasure and convey emotions. We are loyal followers of those winemakers who, with their modest means, manage to produce wines full of soul and love; wines that are nothing more than pure fermented grape juice, with nothing removed or added, and that are a joy to drink.
In summary, here we offer a selection of “living wines” that we like, for all those who wish to develop their sensitivity as well as their palate.
Because most of these wines are small-production and many are sold in limited allocations, we cannot – nor do we want to – have a fixed and permanent selection. Just as with our menus, which change almost daily depending on the freshest seasonal produce we can find, our wineboxes also change often, according to the bottles our sommelier brings in.
