The importance of vegetables and legumes in good cuisine and, in particular, within Mediterranean cuisine is undeniable. Although historically they were not the protagonists, chefs such as Alain Ducasse, Roger Vergé or Jacques Maximin elevated them to another level in the 80s. However, I believe that vegetables are still not fully understood, just like seaweed, another very interesting ingredient for our gastronomy. All these uncertainties make the Vegetals menu a field of great research and work, with the aim of serving and surprising with different dishes.

The wine pairing (€80) surprises with its novelty and originality. Iván Rumyantsev, our sommelier, seeks the balance between wine and our cuisine, simple and with character, and it is no wonder that we surround ourselves with natural, fresh and wild wines, which even with Iván's mastery we barely manage to keep still in the bottle.
