• From the Albufera: We select the finest grains of Valencian rice to create the rice dishes that have become the hallmark of our house.

Our Culinary Commitments

• we bake fresh bread daily. Enjoy our spelt bread, made with olive oil, flor de sal, and a touch of rosemary, and our sourdough bread crafted from stone-ground wheat flour, with flax, sunflower, and pumpkin seeds. Every loaf is prepared with the same passion we've had since RiFF opened in 2001. Both are included with your meal.

• Tuawa Water: A Sustainable Choice. At RiFF, we are committed to excellence and sustainability. That's why we've included Tuawa water on our menu. This filtered and treated water, available sparkling and still, is our choice to reduce environmental impact while offering you purity and freshness.

• Wild-Caught Fish from Valencia Auction: All the fish we offer is wild-caught (not farmed) from the Valencia fish auction. We are proud of our unique relationship with the València Fishermen's Guild. Many afternoons, we personally attend the daily fish auction at the port. This is more than just a purchase; it's our way of guaranteeing unparalleled freshness and quality.
  

• Guérande Grey Sea Salt: The only salt used in our kitchen is traditional Guérande grey sea salt, which is, of course, guaranteed unwashed, unrefined, and additive-free.
